Healthy(ish) berry muffins

 Ingredients:

  • 1 cup wholemeal spelt flour
  • 1 cup plain flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon (or more)
  • 1 egg
  • 2/3 cup light-flavoured extra virgin olive oil
  • 3/4 cup maple syrup / 2 teaspoons golden syrup 
  • 1/3 cup milk (if using golden syrup use ½ cup or more)
  • 1-2 cups frozen berries


What to do:

  • Preheat over to 180C. Line 12x½ cup (125ml) muffin tins with muffin cases.
  • Place the flours, baking powder and cinnamon in a mixing bowl and combine. Make a well.
  • Add oil, milk, maple syrup/golden syrup and egg to a jug and stir. 
  • Pour wet mix into the well and mix with spatula until just combined. Don't overmix.
  • Add berries and gently fold to combine.
  • Spoon the mixture into the prepared tins and bake for 20 mins. Turn halfway. Makes 12.
