Ingredients:
- 1 cup wholemeal spelt flour
- 1 cup plain flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon (or more)
- 1 egg
- 2/3 cup light-flavoured extra virgin olive oil
- 3/4 cup maple syrup / 2 teaspoons golden syrup
- 1/3 cup milk (if using golden syrup use ½ cup or more)
- 1-2 cups frozen berries
What to do:
- Preheat over to 180C. Line 12x½ cup (125ml) muffin tins with muffin cases.
- Place the flours, baking powder and cinnamon in a mixing bowl and combine. Make a well.
- Add oil, milk, maple syrup/golden syrup and egg to a jug and stir.
- Pour wet mix into the well and mix with spatula until just combined. Don't overmix.
- Add berries and gently fold to combine.
- Spoon the mixture into the prepared tins and bake for 20 mins. Turn halfway. Makes 12.
